Ingredients
1200 grams of minced veal calf or 800 grams and 400 grams of minced porcine
1 tomato grated
2 eggs lightly beaten

cup grated carrot
cup chopped green pepper
1 / 3 cup of chopped fresh mint
1 / 3 cup of milk
1 / 3 cup of olive oil
Salt and freshly ground pepper
For the tomato sauce

3 large ripe tomatoes chopped
2 tablespoon olive oil
1 teaspoon brown sugar
1 onion grated
2 cloves garlic, grated
1 / 3 cup of white wine
Salt and freshly ground pepper

Directions
For the roll
Put the mince in bowl of mixer and perichynoume with milk. Allow to absorb the milk and add into the bowl of tomatoes, the toasted bread, parsley, eggs, onion, carrots, the pepper, the mint, olive oil (after keeping a spoonful of soup), salt, pepper and hit with mixer until well homogenized and create a rubber mixture. Coat with olive oil to form a long cake and spread non paper. Repeat the process and the non coated paper with olive oil. Place the meat mixture into the form and with wet hands lightly polish the surface. Bake in pre-warmed oven at 200 degrees covered with the original form for 45 minutes and then leave it open for 30 minutes or until become red surface. Remove form the oven and allow to stand for 5-7 minutes. Remove the form and leave the grass to cool before the cut in slices.
For the sauce
We cook the onion in olive oil and garlic until they soften and fade with the wine. Allow the alcohol to evaporate and add the tomatoes, sugar, salt and pepper. Once you get a boil, lower the heat, cover the pan and cook for 10 to 12 minutes or until the sauce to bind.
Serve the roll with tomato sauce and accompanied by mashed potatoes, vegetables sote or boiled potatoes.
